Chocolate Risotto (main entree, not a dessert!)
Ingredients. Serves 4 people
preparation time: 10 minutes + cooking time
rice 300gr ; unsweetened cocoa 1 tablespoon; cooking cream 3 tablespoons;
onion 1/2; vegetable broth 1 liter; potato 1; celery 1; carrott 1; pinch of cumin; olive oil 3 spoons; parmesan to sprinkle
Method:
1. Mix the vegetable broth with the potato, the carrot and the celery, and add just a touch of cumin.
2. In a frying pan let the finely cut onion simmer in 3 spoons of olive oil, then add the rice and let it 'toast' for a few minutes, and then start adding the vegetable stock, without the vegetables.
3. In the meantime, mix the cocoa and the cream, and warm up making sure you don't let it go to a full 'boil'.
4. When the rice is ready, add the cocoa and cream sauce to it, and garnish with parmesan.
